一般描述
卵类粘蛋白或胰蛋白酶抑制剂是大多数禽蛋白中富含的蛋白质。鸡蛋白约由186个氨基酸残基组成,且高度糖基化。三个串联的结构域均与胰蛋白酶抑制剂同源。其免疫原性很高,而且可能是大多数鸡蛋过敏的原因。
应用
来自鸡蛋白的胰蛋白酶抑制剂已被用于:
- 终止蛋白水解反应
- 在OVO-1溶液中研磨细胞悬浮液以分离视网膜
- 用于皮质解离的磷酸盐缓冲液
生化/生理作用
卵类粘蛋白具有胰蛋白酶抑制剂活性。它有多个可以与免疫球蛋白E(IgE)结合的构象和线性表位。它稳定性高,可耐受加热和蛋白水解。
