General description

Piperonal is a substituted benzaldehyde which is categorized under the class of flavor-related compounds.

Application

Piperonal has been used as a reference standard for the analysis of piperonal in bidi cigarette tobacco by solid phase microextraction-gas chromatography-mass spectrometry (SPME-GC-MS) and in natural vanilla extracts and synthetic flavorings by mixed micellar electrokinetic capillary chromatography (MECC), high performance liquid chromatography (HPLC) and SPME-GC-MS.
It may be used as a reference standard for the determination of piperonal in urban wastewater samples by two-dimensional GC and in commercial coffee granules as aroma compounds by simultaneous multiple SPME-single shot GC-MS.
