General description
Alcalase®, the commercial form of subtilisin, is obtained from Bacillus licheniformis. It is an endopeptidase produced through submerged fermentation. It is mainly used as a detergent additive. Alcalase has an esterase activity for peptide and amino acid esters.
Other Notes
1 U corresponds to the amount of enzyme which sets free 1 μmol folin-positive amino acids and peptides (as tyrosine) per minute at pH 8.0 and 37°C (casein as substrate)
