单半乳糖二酰甘油 (MGDG) 合成涉及 MGlcDG 合成酶存在条件下,二酰甘油 (DAG) 生成单葡萄糖二酰甘油 (MGlcDG)。第二步是 MGlcDG 差向异构化为 MGDG。形成非双层结构 ,也与藻类和真菌有关。
单半乳糖二酰甘油 (MGDG) 和双半乳糖二酰甘油 (DGDG) 是高等植物叶绿体类囊体膜的两种非离子脂质成分。膜中 MGDG 和 DGDG 分别占总脂质含量的 56% 和 29%。DGDG 是一种双层形成脂质,而 MGDG 单独只会形成六角形-Ⅱ 结构。
应用
单半乳糖二酰甘油 (MGDG) 可用于:
- 核磁研究的双层膜微胞制备
- 产生结构化MGDG,用于松油酸富集的研究

生化/生理作用
单半乳糖二酰甘油 (MGDG) 的合成对叶绿体的生物合成是必需的。它也是同步光合作用相关质体和核相关基因表达所必需的。MGDG 是应激时膜脂稳态所必需的。在食品工业中,MGDG 既可用作烘焙促进剂,又可用作非离子型乳化剂。
