General description
亲和素是一种四聚体糖蛋白，是所有卵生脊椎动物的卵中的一种抗营养物质。其占鸡蛋总蛋白的0.05–0.5%。亲和素结构包含八个正交反平行β链、一个二硫键和一个糖基侧链。
Application
蛋白亲和素已被用作蛋白质结合试验中的阻断剂。它也被用于形成亲和素-生物素连接，将吉西他滨结合到微泡上，以便给药到体内模型中。
Biochem/physiol Actions
亲和素可用作抗体、荧光染料、蛋白质以及其他生物化学家感兴趣的分子标记物。亲和素与生物素（维生素H）具有高结合亲和力，可导致微生物无法获得生物素，从而抑制其增殖。亲和素的这一特性有助于其抗菌特性，并影响生物素在体内的吸收，导致维生素B7缺乏。
