General description
葡聚糖是乳酸菌利用蔗糖合成的胞外多糖。它由重复的 D-葡萄糖单元构成，单体间通过 α-1,6糖苷键连接。此外，线性 D-葡萄糖链常间断出现分支结构，这些分支由 α-1,4， α-1,3，或 α-1,2糖苷键连接。
