General description
脂肪酶 B 或三酰甘油酯水解酶属于水解酶类。 南极假丝酵母 (CALB)中的脂肪酶 B 有 317 个氨基酸，分子量为 33 kDa。ALB具有催化三联体和开放的溶剂可及活性位点。催化三联体通常是 Ser-His-Asp/Glu，它存在于平行β片的羧基末端。
Application
固定在酵母菌重组体Immobead 150上的脂肪酶B南极念珠菌已被用于：
- 月桂酸与正丁醇在双相溶剂体系中的酯化反应；
- 鱼油甘油三酸酯的水解；
- 筛选森田-贝利斯-希尔曼 (MBH) 反应所用的酶
脂肪酶在工业上用于拆分手性化合物和生物柴油的酯交换生产。
Biochem/physiol Actions
南极假丝酵母 (CALB) 中的脂肪酶 B 是生物转化反应的通用催化剂。在水介质中，CALB 的行为类似于酯酶，而非脂肪酶。
已证明南极假丝酵母中的脂肪酶B是从大于辛酸的脂肪酸中合成乙基D-吡喃葡萄糖苷酯的有效催化剂。还发现它可催化多种有机反应，包括许多不同区域合成和对映体选择性合成。
脂肪酶可催化三酰基甘油水解成甘油和游离的脂肪酸。
Other Notes
1 U 相当于 pH 7.5，40°C 下每分钟释放 11μmol 丁酸的酶量（三丁酸甘油酯作为底物，产品目录号：91010）
