Biochem/physiol Actions
壳聚糖酶催化壳聚糖中D-氨基葡萄糖（GlcN-GlcN）残基之间的β-1,4-键的内水解。据报道，来自链霉菌属的酶还能水解部分乙酰化壳聚糖中的GlcNAc-GlcN键。
