一般描述

来自牛奶的酪蛋白是一种磷蛋白。酪蛋白有四种主要类型，约占牛奶总蛋白质的80％：α-s1 酪蛋白、 α-s2 酪蛋白、β-酪蛋白和 κ-酪蛋白。酪蛋白被认为是牛奶中的主要保护成分，由于具有天然的生物相容性和生物可降解性，被公认是安全的（GRAS）。

应用

  • 免疫化学中的阻断剂

生化/生理作用

酪蛋白因乳化、起泡、凝胶化、持水能力以及通过官能团与生物活性分子相互作用等特性，被应用于营养食品和各种配方，如水凝胶、薄膜、纳米胶束和纳米颗粒。这种蛋白质很容易获得，可以保护药物不被酶降解，而且无毒，因此酪蛋白有可能用于口服给药系统。
