生化/生理作用

α-酪蛋白在幼儿体内可能是一种免疫原,抗α-酪蛋白抗体与胰岛素具有很强的交叉反应性。这种效应解释了不常见的胰岛素自身免疫,但这似乎并没有进展到I型糖尿病。
来自牛乳的酪蛋白钠盐是一种磷蛋白。有四种主要类型的酪蛋白组成了牛乳中约80%的总蛋白量:α-s1 酪蛋白, α-s2 酪蛋白, β-酪蛋白以及κ-酪蛋白。酪蛋白被视为牛乳中的主要保护成分。
