一般描述

作为一种非蛋白质氨基酸，刀豆氨酸是精氨酸的同源物。它存在于苜蓿、丁香、豆类、洋葱和芽菜等植物中。刀豆氨酸是由L-刀豆氨酸琥珀酸合成而来，其生物合成途径首次在刀豆植物中阐述。

刀豆氨酸已用于：

生化/生理作用

刀豆氨酸是一种天然的L-氨基酸，因结构与L-氨基酸相似，用于对抗和干扰L-精氨酸-利用酶。它是一种诱导型一氧化氮合酶(iNOS)的选择性抑制剂。作为精氨酰tRNA的底物，其在蛋白质合成过程中被合并，导致它作为精氨酸tRNA的底物，在蛋白质合成过程中被合并，导致异常的canavanyl蛋白质。补充刀豆氨酸会恶化紫花苜蓿引起系统性红斑狼疮样综合征(SLE)，其与核内体和蛋白酶体的结合破坏了抗原加工。
天然存在的 L-氨基酸会干扰 L-精氨酸利用酶，原因是它与该 L-氨基酸结构相似。它是诱导型一氧化氮合成酶 (iNOS) 的选择性抑制剂。
