General description
β-乳球蛋白在免疫应答中发挥关键作用，并调节 IgM 水平和细胞增殖。β-牛乳球蛋白是蛋白质折叠研究和变性动力学的模型系统。β 的多态性-乳球蛋白可调节牛乳产量和组成。
奶牛乳汁中含有蛋白质 β-乳球蛋白 (BLG)。天然存在于编号遗传变异中，最普遍的牛变异是 BLG a 和 BLG B。
脂质运载蛋白家族的一员，βLg 是由 162 个氨基酸组成的小分子蛋白质，分子量约为18,400 Da,.具有八链 β-桶（链 A-H），后接一个三圈 α-螺旋和一个最终 β-链（链 I）构成二聚化界面的一部分。
Application
β-乳球蛋白被用于细胞学检测，以诊断肠易激综合征患者的食物超敏反应。
