应用
大豆酶将使用花生四烯酸作为底物，以亚油酸作为底物的活性约为 15%；花生四烯酸氧化的产物是 12-或 15-过氧化氢花生四烯酸（12-HPETE 或 15-HPETE）。
来自Glycine max （大豆）的脂氧酶（也称脂肪氧合酶）已被用于修饰从人血浆中分离的低密度脂蛋白。
生化/生理作用
催化含有顺式，顺式-1,4-戊二烯结构的脂质的氢过氧化。

一个酶活性单位是指在pH 9.0、25°C 下，在3.0 ml体积（1 cm光程）中使用亚油酸作为底物时，每分钟使A234 增加0.001所需的酶量。一个A234 单位相当于μmole亚油酸的氧化。
