General description
β-乳球蛋白B(β-LG B)为 β-乳球蛋白同工型,是由162个氨基酸组成的小分子蛋白,分子量为18.2 kDa 最适pH为5.2。 在酪蛋白中含量高,在生牛乳中含量相对较低。β-LG 有八股 β桶状结构(A-H链)后接三转角 α螺旋和最终 β链(I链),形成二聚体的一部分。
奶牛乳汁中含有β-乳球蛋白 (BLG)。它天然存在于许多遗传变异体中,最普遍的牛变体被称为BLG A和BLG B。
