General description

木瓜蛋白酶是一种半胱氨酸蛋白酶，存在于番木瓜中。它由单一多肽链组成，含有三个二硫键和一个巯基。

Application

木瓜乳汁中的木瓜蛋白酶已用于：

消化颈动脉平滑肌细胞
解剖溶液
生产抗体 Fab 片段
细胞解离，因为其经证对于某些细胞更有效、损伤更小
消化软骨细胞 /支架培养物，对细胞增殖进行总 DNA 定量
用于神经基础培养基的补充剂，以形成视网膜细胞悬液

适于制备测序用单细胞悬液。

用于产生抗体的 Fab 片段。也用于细胞分离，因为在某些组织中，经证明其比其它蛋白酶效率更高且破坏性更小。

Biochem/physiol Actions

一种半胱氨酸蛋白酶，可切割碱性氨基酸、亮氨酸或甘氨酸的肽键。
最适pH 6.0 - 7.0

木瓜蛋白酶有广泛的特异性，可裂解碱性氨基酸、亮氨酸或甘氨酸的肽键。它还会水解酯和酰胺。一般认为木瓜蛋白酶可以比胰蛋白酶更广泛地消化蛋白质底物。木瓜蛋白酶常用于细胞分离操作中，因为它对某些组织分离效率高，破坏性更小。使用木瓜蛋白酶可产生更有活力的平滑肌细胞，同时保持细胞′对刺激物的敏感性。木瓜乳液木瓜蛋白酶具有抗白色念珠菌的抗真菌活性，是一种半胱氨酸蛋白酶。

最佳pH为6.0-7.0。
木瓜蛋白酶会水解酯和酰胺。
