General description

Tagatose is a monosaccharide that naturally occurs in small quantities in certain fruits and dairy products. It is classified as a ketose and differs structurally from fructose due to the difference in orientation of the hydroxyl group on the fourth carbon.L-Tagatose is rare ketohexose present in small quantities in a variety of foods that is considered as an alternative sweetener.

Application

L-tagatose may be used as an artificial flavorenhancer, stabilizer in formulations and humectant.

Biochem/physiol Actions

Long-term administration of L-tagatose does not affectpancreatic β-cell function. Similarly to D- Tagatose, it has a minimal effecton blood glucose and insulin levels.
