General description
卵类粘蛋白或胰蛋白酶抑制剂是大多数禽蛋白中富含的蛋白质。鸡蛋白约由186个氨基酸残基组成，且高度糖基化。三个串联的结构域均与胰蛋白酶抑制剂同源。其免疫原性很高，而且可能是大多数鸡蛋过敏的原因。
