[Cysteine stability in aqueous amino acid solutions].

ABSTRACT

The effect of pH on the cysteine content in the model solution containing 17 L-amino acids and D-sorbitol, as well as the effect of traditional antioxidants potassium metabisulfite and ascorbic acid on the cysteine stability were studied. Optimal conditions for cysteine stabilization in aqueous solutions of amino acids, available for parenteral protein feeding, were found.
