生化/生理作用

由植物合成的淀粉为直链淀粉和支链淀粉的聚合物。直链淀粉是葡萄糖的线性聚合物,而支链淀粉是一种高度支化的聚合物。淀粉是一种可再生和可生物降解的聚合物,广泛用于淀粉纳米粒子(SNP)的开发。淀粉具有灵活的结构特性,并经过修改和功能化,适用于制药应用。淀粉包括快速消化淀粉(RDS)、缓慢消化淀粉(SDS)、以及抗性淀粉(RS)。抗性淀粉可改善代谢特征以及肠道细菌,并具有抗糖尿病功能。抗性淀粉具有低血糖指数,有助于控制体重。它可能能够有效治疗代谢疾病和结肠癌。

制备说明

最佳做法是,首先使用2 g淀粉和少量冷水制备糊状物,然后边搅拌边将其添加到100 mL沸水中。
乳光色不应有明显变化。
