3-脱氢莽草酸是在儿茶酸合成中由D-葡萄糖生成的生化中间体。3-脱氢莽草酸已用于利用D-葡萄糖衍生的β-酮酯对儿茶酸（1）和2,4,5-三羟基苯甲酸乙酯（2）进行合成的研究中。3-脱氢莽草酸也已用于评估莽草生物合成途径，以开发无毒抗菌剂、除草剂和抗寄生虫药物。
