应用

清蛋白（源于鸡蛋清）还用于研究输液（初乳乳清、牛奶乳清、羊水）对于胎猪肠道卵清蛋白 (OVA)吸收的影响。
磷酸化糖蛋白，可用作蛋白质电泳的标记物（~45kDa）。已被用于生产哮喘的动物模型。

生化/生理作用

差示扫描量热法表明鸡蛋清白蛋白在 84℃ 下变性。卵清蛋白可作为载体蛋白与合成肽结合，用作免疫原。
