应用

生化/生理作用

α-牛胰腺胰凝乳蛋白酶通过Ca2+实现稳定并且催化肽键的水解，尤其氨基酸酪氨酸、苯基丙氨酸、色氨酸以及C端亮氨酸。α-胰凝乳蛋白酶受Cu2+和Hg的抑制。
一种丝氨酸蛋白酶，能将与芳香烃或其他大型疏水性侧链（Tyr、Trp、Phe、Met、Leu）结合的肽从键的羧基端水解。

在 pH 7.8、25°C 条件下，1 个单位将每分钟水解 1.0 μmol BTEE。
