应用

胃蛋白酶-琼脂糖已作为固定工具用于研究胃蛋白酶的重折叠能力。它还用于从兔IgG制备F(ab′)2片段。
生化/生理作用
优先将C末端切割成Phe、Leu和Glu。它不会在Val、Ala或Gly上进行切割。最佳pH2-4。活性成分为4 M尿素和3 M盐酸胍。在60°C时稳定。胃蛋白酶在pH > 6时会不可逆地失活。

制备说明
一克固体可膨胀至5-10ml填充凝胶。
其他说明
在pH2.0，37℃条件下用血红蛋白作为底物，对TCA可溶性产物进行测定时，一个单位每分钟可产生0.001 ΔA的280（终体积 = 16 mL。光程 = 1 cm。）
