Biochem/physiol Actions

与许多其他肽酶不同,胃蛋白酶只水解肽键,而不水解酰胺或酯键。其裂解特异性包括肽键两侧含有芳香酸的肽段,特别是当另一残基也是芳香或二羧酸时。如果肽键附近有含硫氨基酸,即含有芳香氨基酸,则易水解。胃蛋白酶也会优先在苯基丙氨酸和亮氨酸的羧基侧裂解,在谷氨酸残基的羧基侧裂解的程度较小。它不裂解缬氨酸,丙氨酸,或甘氨酸键。Z-L-酪氨酸、Z-L-谷氨酰胺-L-酪氨酸或Z-L-蛋氨酸-L-酪氨酸可作为胃蛋白酶消化的底物。胃蛋白酶被几种含有苯丙氨酸的肽所抑制。
