General description
Chicken IgY is an IgG class immunoglobulin. It is made of two heavy (H) and two light (L) chains. It has a molecular weight of 180kDa. IgY can be used for oral passive immunization. It is resistant to trypsin or chymotrypsin digestion. Immunoglobulin is known as IgY in hen due to its presence in the egg yolk and variations in protein nature when compared to the mammalian Ig. It possesses good stability under food processing conditions, hence it is used in food formulation or supplements. In the future, IgY may play a vital role in research, diagnosis and immunotherapy.
