Sodium propionate has bacteriostatic and anti-fungal activity.

Application

Sodium propionate was used to study the effects of sodium propionate and potassium sorbate on the growth of and patulin production in Penicillium expansum.

Biochem/physiol Actions

Sodium propionate inhibits the growth of lactic acid bacteria. Intraportal sodium propionate administration depresses food intake in sheep.
