Application

To determine the level of pullulanase activity, the Red Pullulan film method can be used where polyacrylamide gels are made with 3% red pullulan to stain gels red and provide a substrate for pullulanase. Samples can be placed on the gel and the activity of pullulanase determined by the decolorized area on the gel.
