General description
Tannase / tannin acyl hydrolase catalyzes the hydrolysis of tannins to yield gallic acid and glucose. It is produced by plants and microorganisms. In industries, tannase is used to manufacture gallic acid. In addition, it is also used in pharmaceutical, chemical industries, beverage and food processing.
