Beverages are liquid, so sample preparation is often simple, and can be accomplished with direct injection, headspace, solid phase microextraction (SPME), solid phase extraction (SPE), or liquid-liquid extraction (LLE). SPME coupled with GC is an effective technique for monitoiring the volatiles present in the headspace over spirits.
