Description
General description
Glucosinolates are plant secondary metabolites present in Brassicaceae family plants, including broccoli, cauliflower, horseradish, and cabbage. When plants are chewed, cut, or otherwise damaged, glucosinolates form mustard oils that give the plants their pungent flavor. These oils have a characteristic bitter flavor and can be used for crop protection or as an antibacterial in medicinal products.In this method for the determination of glucosinolates, a Chromolith® HighResolution RP-18 endcapped column was used with UV detection.
