一般描述
酪蛋白是牛奶中主要的磷酸化蛋白质,约占牛奶总蛋白质含量的80%。牛奶由四类酪蛋白组成,如αS1、αS2、β和κ。酪蛋白以胶束形式存在于牛奶中。
应用
牛奶中的酪蛋白-异硫氰酸荧光素已被用于:
- 作为对拟南芥细胞中的蛋白酶进行半定量分析的底物
- 测定分泌的LasB(弹性蛋白酶)、碱性蛋白酶和蛋白酶IV的酪蛋白水解活性
- 测定化脓性链球菌细胞中SpeB(半胱氨酸蛋白酶)的活性
