一般描述

明胶存在于胶原蛋白中,是一种具有高平均分子量的水溶性蛋白质的异质性混合物。通过在水中将皮肤、肌腱、韧带、骨骼等进行煮沸来提取蛋白质。
明胶来源于胶原蛋白,是组织胞外基质(ECM)中含量最丰富的蛋白质。它是一种生物活性物质。明胶由基质金属蛋白酶(MMP)敏感的蛋白序列组成。

应用

来自冷水鱼皮的明胶已用于:大鼠大脑切片免疫标记的孵育培养液(IM),用作各种细胞蛋白质印迹的洗涤液组分;还用作HeLa细胞免疫荧光染色的阻断剂。
在免疫组化中用作封闭剂。

    Gelatin is soluble in glycerol and acetic acid, and more soluble in hot water than in cold water.

    The specification for shelf life is 2 years for unopened bottles stored at 2-8°C.  Each lot is assigned a retest date; this date is given on the Certificate of Analysis avialable from our website.

    Type A gelatin is derived from acid-cured tissue whereas Type B gelatin is derived from lime-cured tissue. Type A gelatin has about 78-80 millimoles of free carboxyl groups per 100 g of protein and a pI of 7.9-9.0. Type B has 100-115 millimoles of free carboxyl groups per 100 g of protein and a pI of 4.7-5.2.
