一般描述
玉米醇溶蛋白(Zein)是一种醇溶蛋白(prolamine),存在于玉米胚乳细胞中。玉米醇溶蛋白是20kDa的结构蛋白,由位于玉米7号染色体短臂上的基因编码。该蛋白缺乏赖氨酸和色氨酸等必需氨基酸,因而营养价值较低。
应用
玉米醇溶蛋白已用作电纺技术的生物聚合物。它还可与淀粉共混,用于生产热塑性材料。
生化/生理作用
玉米醇溶蛋白可用于生产纤维、黏结剂、涂料、陶瓷、墨水、化妆品、纺织品、口香糖和生物可降解塑料。该蛋白是生物可降解和可持续性的农用聚合物,因此是传统油基塑料极具潜力的替代品。
