General description
转化酶由SUC2（酿酒酵母 S288C）基因编码。在酵母中，该酶的存在形式为：糖基化（分泌）和非糖基化（细胞内）形式。外部转化酶由碳水化合物 (50%) 和 60,000 D 亚基组成。
Application
面包酵母(S. cerevisiae)的转化酶已用于：
- 液体培养基 (YES) ，用于确定转化酶活性
- 糖和淀粉的提取和分析反应混合物补充剂
- 蔗糖水解
用于生产糖果食品和人造蜂蜜。
Biochem/physiol Actions
转化酶将蔗糖水解成葡萄糖和果糖，产生无色产物，与产生有色产物的酸水解不同。
Other Notes
在25°C、pH 4.6 条件下，1 单位酶每分钟可将1.0 μmole 蔗糖水解为葡萄糖和果糖。
