General description

Glycinins are a family of soybean storage proteins produced during embryogenesis. Glycinin is a major allergen within soy and is a soluble glycoprotein that exists in a homo-hexameric form. At least five genes encode for the most abundant subunits.

Glycinin is a hexameric protein containing six similar subunits, each of which comprises an acidic polypeptide chain connected by disulfide bonds to a basic polypeptide chain.
